Sensory Lab - The Coffee Chemistry is Right!

Serious coffee devotion right next to David Jones… There’s no other coffee lab like Sensory Lab! The ambience is more the Little Collins Street set. With lab equipment all over the place you know it’s serious! Melbourne coffee chic meets Professor Julius Sumner Miller. For a time baristas were wearing lab coats but now rarely sighted! The last time I saw someone wear a lab coat they gave me out lbw in grade cricket (flashback). Also flashbacks of school chemistry.

The passion and knowledge of coffee is impressive. Impressive wordage on the blackboard – single origins, slayer, and syphon. Three essential “s” words in the lab. These guys venture into espresso alternatives such as siphon coffee, pour over and cold drip. I should bust a move and embrace this but I’m locked in my latte world. By the way - my latte was great and one of the best in Melbourne. You are able to engage the baristas and speak in coffee languages.

These guys are roasters of fine coffee and connected to St Ali.

The ambience is excellent and décor modern. You sit among coffee purists and keen shoppers – and those with a passion for both.

It’s about simple meals here, and would like something a little more exciting. The coffee is the star!

I’ve rocked up here early in the morning pre 9am hoping it would be open but they have a coffee station with window for take aways only.

Still remains one of the best in Melbourne!
