Rib Degustation. Yes you are reading correctly. The World Loves Melbourne was treated to a decadent rib degustation with matching beers at Ribs & Burgers Northcote. Feeling like we were transported to a Texan BBQ the ribs we were served were out of this world.
As we discovered at the rib degustation, Ribs & Burgers menu serves up some of the most succulent ribs of the beef, pork and lamb variety which can take up to eight hours to cook. The beef and lamb is prepared in a dry rub, whilst the pork is prepared in a wet sauce, in order to specifically enhance each meat's authentic flavour the way they were intended.

How good were these ribs! Paired with their 40 year old secret lemon and herb basting, the result is tender juicy cuts of meat that melt in your mouth. Fear not however if you are a chicken fan as you haven't been neglected, with their 24 hour marinating process which gives the chicken a distinct flavour.

The recipes and techniques used at Ribs & Burgers are fostered from an older generation of family members that cooked ingredients, (in particular meats); through a style they felt needed to be shared with the community. The ethos and philosophy of Ribs & Burgers food is to prepare and cooked in a style that enhances and extracts the authentic flavour of that ingredient.

The Meat: The meats are prepared & grilled to suit and compliment the flavour of the various types of meat. For example, the ribs are slowed cooked to ensure the meat is tender and falls off the bone when you bite into it. The pork ribs are cooked in a wet sauce environment, whilst the beef and lamb ribs are cooked in a dry environment (without sauce) to enhance the flavour of the produce. Our burger patties have been researched intensely to find the most flavoursome balance of the right cuts of meat to produce all rounded full mouthed meaty flavour. The chicken is marinated for 24 hrs with a signature lemon and herb marinade to offer guests a distinct flavour and experience.

The Basting: The basting is a 40yr old secret recipe that only few members in the company know how to make, to ensure it remains an exclusive flavour and taste to the food offering. The sauces are also unique to the brand - an example is ‘The Pink Sauce’ we use in our burgers. It’s a family recipe that you cannot find or taste elsewhere.

The design is driven by open style kitchen emphasizing on the theatre of food preparation and the deliverance of gourmet hearty meat food to its customer. This theatre is amplified exposing the operations and allowing the customer to connect with the brand. 3 The crafted detailing to the interior, vintage elements sourced globally, new creative ideas are fused together with substantial brand messaging engaging the customer to experience a new casual dining experience.
