Every detail of this sensory experience —sight, sound, aroma, and taste—reminds you that this isn’t just another Melbourne laneway cafe but a unique immersive journey.
The open-plan layout places you within arm’s reach of the baristas, letting you watch the magic unfold as they work their craft. It’s a rare kind of intimacy, the kind that makes you feel part of something bigger—a global coffee movement, distilled into a single, buzzing space. Whether you’re here for a quick caffeine hit or a deep dive into specialty coffee, Toby’s Estate delivers both.
On one end, you’ll find the brand’s beloved signature blends, dialed in to perfection. But the real draw is their top-tier specialty range, an exercise in precision and passion.
We started with a fruit-forward Ethiopian, its brightness a wake-up call to the palate. Then, a $30 cup (worth it) of Panama “Parabolic” Gesha, sourced from the famed Savage estate—complex, layered, and so delicate it felt like sipping a fine wine. The Brazilian espresso that followed brought a comforting contrast—almond, chocolate, and a pop of citrus brightness.
The food menu is impressive, with quality ingredients leading the way. A sample plate of gourmet bagels showcased their approach: a silky tuna melt with two-cheese indulgence, an avocado number with smashed peas and fresh herbs, and a fiery gochujang cucumber combo, its heat balanced by smoked salmon. Each bite, like the coffee, was precise and intentional.
Toby’s Estate in Fitzroy is a sensory deep dive into the best of specialty coffee, with top-tier service and a front-row seat to the action.
While have a longstanding presence in Melbourne, Toby’s Estate has hit the high notes with their new cafe. Melbourne’s coffee scene just got another cafe heavyweight.
