Pincho Disco just turned Melbourne into a Rio carnival extravaganza for the Melbourne Food & Wine Festival, and I’m still buzzing from the explosion of colour, flavour, and pure energy!
Kicking things off with their signature Pincho Disco Caipirinha—a zesty Brazilian masterpiece of cachaça, lime, sugar, and ice—this night was a full-on sensory fiesta.
Head chef Diego Cardenas took us on a wild culinary ride, blending Brazilian street food vibes with his travel-inspired genius.
The tasting menu, paired with South American wines and cocktails, was a global flavour bomb. The Pão de Queijo with truffle and caviar—cheesy, luxe, and addictive. Then there’s the Carpaccio de Mar, where salmon, tuna, and kingfish danced with cashew dressing and fresh fig. Acarajé with Vatapá brought crispy bean cakes stuffed with a creamy shrimp and coconut paste, loaded with crab and prawns. The Moqueca de Peixe, a fragrant cod stew with chilli, coriander, and plantain, was soul-warming perfection.
Another highlight was the Picanha—juicy Black Opal Wagyu MB9 rump cap with a punchy Brazilian salsa. A Palm Hearts and Tomato Salad with passion fruit kept it fresh.
The Pavê layered biscuits, doce de leite, and guava was a decadent tiramisu-like sweet finish.
The vibe was electric at Pincho Disco. Live dancers, pulsating beats, and a dinner crowd soaking up Brazil’s carnival spirit made this the hottest Friday night spot in Melbourne. An impressive Melbourne Food and Wine Festival event!
