Our dining experience began with a complimentary bite of torched salami on toast, a delightful gesture that set the tone for the meal. The Sydney Rock Oysters, plump and impeccably fresh, were served with lemon and mignonette, offering a briny burst of the sea. The Polpo Scotatto, a rustic yet refined dish of pan-fried octopus with beetroot mash, pickled caper berries, and a parsley emulsion, brought a touch of spice and citrus zest that was both bold and balanced.

The standout dishes, however, were the pastas. The Fettuccine Moreton Bay Bug was a revelation—hand-cut pasta enveloped in a luxurious lobster bisque, studded with generous chunks of Moreton Bay bug, cherry tomatoes, garlic, and parsley. This dish, with its stunning presentation and rich flavors, is undoubtedly one of Melbourne’s finest. Equally impressive was the Linguine al Nero di Seppia, a striking squid ink linguine adorned with prawns, clams, and a vibrant white sauce (notably cream-free), showcasing the undeniable quality of the pasta and seafood.

For meat lovers, the Carpaccio di Manzo Arrostito delivered Wagyu scotch fillet with porcini mushrooms and a crispy herb tart, while the Ravioli Wagyu da Guido, featuring Sher Wagyu with a marble score of 8, rosemary-infused butter, and New Zealand black truffle, was pure decadence. The Involtino di Polletto, a pullet roulade with roasted Portobello mushrooms, Taleggio, and jus gras, required 20 minutes to prepare but was worth every second—a testament to the kitchen’s dedication to craftsmanship.

Desserts were no less spectacular. The Tiramisu, true to its Venetian roots, was a nostalgic masterpiece, while the “Not a Pannacotta”—a light coconut creation with fresh strawberries, blueberries, and raspberry purée—offered a refreshing finale.
