Star Chefs Transform Rosebud Broadway Theatre into Orson Dining
New Orson Dining in Rosebud is redefining Peninsula dining with its exquisite blend of history, hospitality, and hyper-seasonal cuisine. Housed in the beautifully restored foyer of the iconic Broadway Theatre, this new restaurant by Melbourne’s celebrated chef couple, Sarah Cremona and Ryan Spurrell, is a love letter to local produce and culinary artistry. I had the privilege of attending Orson’s soft launch, an intimate sit-down dinner that showcased the restaurant’s potential to become a must-visit destination for food lovers.

The moment you step into Orson, the space captivates. The century-old terrazzo floors, painstakingly restored to their original glory, gleam under soft lighting, whispering stories of the theatre’s past. The preserved ticket box and original entry doors stand as proud nods to the building’s heritage, while the modern fitout introduces a light, airy aesthetic that contrasts beautifully with the dark, moody interiors common in fine dining.

Vinyl records spin soulful tunes, setting a relaxed yet sophisticated vibe, and the bartenders craft impeccable cocktails, like the perfectly balanced Negroni. For those seeking an immersive experience, the chef’s table offers a front-row seat to the culinary magic unfolding in the kitchen.

The soft launch featured a sensational six-course menu, each dish a testament to the chefs’ deep connection with local producers and their commitment to showcasing the Peninsula’s bounty.

The meal began with plump Merimbula oysters, their briny freshness a pristine opener that set the tone for the evening. The Orson charcuterie selection followed, a rich medley of cured meats that delighted the palate with its depth and variety. A standout starter was the Sabudana Vada, featuring spanner crab, caviar, and a vibrant green goddess sauce, delivering a crispy yet delicate bite that was both luxurious and approachable.

The starters continued to impress. Charred mackerel, with its smoky depth, was elevated by sea vegetables and marigold, creating a harmonious balance of flavors. The broccoli five ways was a brilliant showcase of the vegetable’s versatility, with tender florets and a lush broccoli sauce stealing the spotlight. Each dish was a vibrant celebration of seasonal ingredients, thoughtfully plated to highlight the natural beauty of the produce.

The mains were nothing short of extraordinary. The monkfish, served in an oolong broth with salt-baked celeriac and whole lemon, was silky and citrusy, a masterclass in delicate yet bold flavors. However, the Yester-Year Chicken was the undeniable star of the evening. Sourced from a small local producer, this cockerel dish, paired with spring garlic, barley, and rich jus gras, was a revelation. Juicy, flavorful, and impeccably executed, it was one of the best dishes I’ve tasted this year, a true testament to the chefs’ skill and dedication to quality.

Desserts were equally dazzling. The carrot cake, paired with farmhouse cheddar and spiced pear, struck a perfect balance between sweet and savory, offering a fresh take on a classic. The whipped chocolate ganache, adorned with candied kumquat and river mint, was pure indulgence, a decadent finale.

The wine pairings, curated by a young sommelier Marcus Sime, were a highlight of the evening. Thoughtfully selected to complement each course, the wines blended local Peninsula gems with international picks, elevating every bite. The hospitality at Orson was warm and genuine, making every guest feel like part of the family. Even the landlords, whose family has owned the theatre for over a century, were present, celebrating the rebirth of this cherished space.

Orson Dining is a destination that captures the soul of Rosebud. The chefs’ relationships with local producers ensure a menu that shifts with the seasons, offering diners a fresh and authentic experience with every visit. For Rosebud locals, Orson is a game-changer, eliminating the need to drive to Sorrento for a refined dining experience. In fact, it’s likely that diners from Sorrento will make the trip to Rosebud to experience Orson’s magic.

From the first pour to the final bite, Orson tells a story of community, history, and culinary excellence. This is a place where the past meets the present, where every dish is a celebration of the Peninsula’s land and sea. Whether you’re a local or a visitor, Orson Dining is a must-visit, a shining addition to Victoria’s dining scene that promises to leave you inspired and satisfied.
