67 Pall Mall unveils official renders of landmark Melbourne club at 85 Spring Street
The private Members' Club for wine lovers, 67 Pall Mall, has unveiled the official renders of its highly anticipated Melbourne location at 85 Spring Street, revealing four extraordinary levels that will crown the building and redefine the Club experience in Australia.

Spanning over 2,400 square metres across the top four floors, the Melbourne Club will seamlessly blend the city’s rich hospitality culture with the global identity of 67 Pall Mall. Set to open in mid-2026, the new Club will offer an unparalleled experience for wine aficionados through world-class design, food, and service – all underpinned by one of the world’s most extensive wine lists.

The design has been led by Rockett Studio, the London-based architecture and interiors firm responsible for all 67 Pall Mall clubs worldwide. Known for their distinctive blend of drama, warmth, and sophistication, Rockett Studio has tailored the Melbourne Club to reflect the local spirit, layering mood and texture with openness and light, and crafting a journey from atmospheric lounges to panoramic rooftop views.

Founder and CEO of 67 Pall Mall, Grant Ashton said: “67 Pall Mall Melbourne has the biggest footprint of all our Clubs globally and each of its four floors is designed for a different experience. Members can drop in for a coffee, a Grand Cru Burgundy, a long lunch, late-night drinks or a masterclass, and it will never feel the same twice. The Club is built with versatility in mind, taking you seamlessly from day to night and fitting naturally into our Members’ lifestyles."
"Our brief to our interior design firm, Rockett Studio, is for each 67 Pall Mall Club to have its own look that reflects its locale and heritage. At the same time there are things that make it distinctly 67 Pall Mall – the Wine Towers, or in this case, the Wine Wave that support our 1,000 wines by-the-glass list,” he said.

Four levels of wine-led luxury
Level 14: The Clubroom
A relaxed, all-day lounge and dining space anchored by a 5,000-strong wine list spanning 42 countries – with an extraordinary 1,000 wines available by the glass. The menu will embrace wine bar classics like charcuterie, steak sandwiches, and seasonal small plates, creating a space for casual dining and conversation.
Level 15: The Restaurant
With seating for 80 and two private dining rooms, this elegant floor will highlight share-style dishes and local produce. Culinary direction is helmed by acclaimed duo Martin Benn and Vicki Wild, bringing their fine-dining pedigree and relaxed sophistication to Melbourne.
“Level 15 will be a restaurant that reflects the identity of Melbourne. My menu will take a less formal, more evolved approach to the cuisine I’m known for, reimagining classic dishes with nods to Japan, but always with a distinctly Australian outlook,” said Benn.

Level 16: Champagne Lounge
Designed for indulgence and theatre, this glamorous space features a Champagne lounge with an oyster and seafood bar and offers the first of two outdoor terraces. Expect the sparkle of Zalto glassware, the pop of corks, and curated plates of raw seafood and caviar as Members begin their evening in style.
Rooftop Bar: Whisky & Views
Beneath a dramatic retractable glass ceiling lies a whisky-centric cocktail bar with rare bottlings from Springbank, Bruichladdich, and The Macallan. With sweeping views of Treasury and Fitzroy Gardens, the MCG, Parliament House, and the city skyline, the rooftop will be a destination in itself.
Throughout all levels, wine remains the cultural and architectural centrepiece. A striking 7.5-metre Wine Wave connects the floors above, while an 18,000-bottle cellar anchors the collection below.
