The meal began with a series of beautifully executed starters showcasing exceptional produce and restrained technique. Expect silky burrata, pristine seafood, and expertly balanced antipasti that set the tone for what is to come. Scapece Oysters Mignonette gel, nori powder spring onion oil were fresh and delicious, while a Tartlet with sun dried tomatoes, straciatella mousse and basil was vibrant and full of flavour, Pizza styl Wagyu bresaola with truffle butter was a revelation.

Roast beef carpaccio, porcini mushroom sauce, marinated oyster featured high class beef and was seared to perfection (rather than raw).


100% Buffalo Burrata: A Rare Find in Melbourne

The burrata here is something special. Made from 100% buffalo milk, it offers a richer, creamier flavour than the more common cow’s milk versions served elsewhere. It’s indulgent, delicate, and a reminder that ingredient quality matters. Few Melbourne restaurants serve buffalo burrata of this calibre.


AGNOLOTTI DEL Plin with Seven Types of Mushrooms

One of the highlights of the evening was the Agnolotti del plin. This was an off-menu dish but demonstrated the versatility of this restaurant, which served us several dishes that were not on the tasting menu. Each delicate parcel was filled with an extraordinary blend of seven different mushroom varieties, delivering layers of earthy depth and umami. The pasta itself was flawless - thin, tender, and perfectly cooked. This is the sort of dish that reflects both craftsmanship and imagination.


SQUID INK LINGUINE SKULL TIGER PRAWNS SIGNATURE

Another highlight was the Squid Ink Linguine, Skull Island tiger peawns ragu, prawn bisque, orange zest - a masterpiece of pasta cooking with high qu ingredients and a prawn bisque with depth of flavour.

While we didn't order this dish on this occasion the Sher Wagyu Ravioli is the most famous dish at Da Guido La Pasta that hits you with intensity of flavour from the Sher Wagyu filling, rosemary powder, Parmigiano Reggiano and butter sauce. Indulgent and luxe.


1KG SHER WAGYU RIB EYE COOKED TO PERFECTION

For the main event, the Sher Wagyu Rib Eye with bone in and beef jus was exceptional. Beautifully marbled (our steak was MSg) and expertly cooked, it achieved the ideal balance of tenderness, richness, and flavour. It was a reminder that sometimes the simplest presentations can be the most powerful when the produce and execution are this strong.

Deconstructed Tiramisu Everyone Talks About

Dessert was a deconstructed tiramisu with house-baked biscuit that fully lived up to its reputation. All the classic elements were present - coffee, mascarpone cocoa, and sponge - reimagined with elegance and precision. It was playful, sophisticated, and an unforgettable finale.

We also rated highly the Meringue sculpture and the Bavarese alle mele caramelised apple dessert with Grand Marnier and creme bavarese.
