Old-world charm is not a phrase I use carelessly, but Mill Place Merchants earns it completely. The atmosphere feels removed from modern Melbourne — not in an affected way, but in a way that makes you want to slow down and stay a while.
The cocktails are inspired by New York's Prohibition era and they carry genuine weight — more potent than most cocktails around town, and unapologetically so. The Monte Carlo is outstanding. The Millionaire is one of the great Melbourne cocktails. And the Old Fashioned, poured with 60ml of bourbon, is the way an Old Fashioned should be made. This is the grungier, more playful side of Melbourne's laneway bar culture — and it is enormously appealing. The cocktails are well above average, the beer selection is great, and when the DJs fire up on busy nights the whole place comes alive. It is open seven days (closed Christmas Day, NYE and NYD) and functions beautifully across daylight hours and late into the evening, with a rotating roster of food trucks serving the hungry crowd.
What Whitehart does better than almost anyone is atmosphere. There is a focused list of around 25 cocktails, split between signatures and updated classics, and those 25 will be made better here than almost anywhere else. Lambert would rather perfect a short menu than dilute the experience by making anything you can name. It is a polarising approach that produces an extraordinary result.
The minimalism of the space — leather, wood, the right amount of low light — focuses everything on the connection between bartender and guest. Sit at that bar and you will have a conversation. You will be looked after.
