Francophiles, sensualists and lovers of decadent delights, listen up! A la folie is a specialist patisserie in Chapel St, South Yarra which serves only authentic macarons and unique “petits choux”, all masterfully created by self-professed choux lover and patisserie perfectionist, Mercédé Coubard.

Bite into the crisp, almond-based outer shell of an A la folie macaron and the silky smooth inner will delight you with an explosion of intense flavour unlike any you’ve tasted before. Mercédé’s interpretations of this traditional French delicacy are filled with delicious, natural crème centres that could well make you swoon, with a changing array of up to fourteen different flavours to choose from.

Our favourite was the petits choux with outstanding fillings. Mercédé’s petits choux are her own creation, a modern twist on the French classic, choux à la crème. These small bites of light and airy choux pastry are filled with naturally flavoured, silky crème and topped with a colourful fondant. They are the perfect bite-sized balance of pastry and smooth filling.

A la folie” is a French expression used when one is madly in love and that encapsulates the passion that Mercédé has for her creations. “These little guys will give you a lot of pleasure,” she says. “Choux pastry is my favourite and I wanted to introduce it to people so they could discover its unique delights for them- selves. The joy I get from eating macarons and petits choux is surpassed only by the pleasure I get from seeing others enjoy them.”

And enjoy they do, because Mercédé’s commitment to quality is uncompromising. Her pastry creations are distinguished by their exclusively natural ingredients, her strict adherence to homemade processes for each and every morsel... and of course that elusive je ne sais quoi that makes them so unforgettable.

Mercédé trained under French master, Sébastien Serveau at the renowned Alain Ducasse culinary school in Paris. For her, pastry is an art; a never ending creative journey that she wants to share with others. She will soon be returning to Paris and then later traveling to Tokyo to rub shoulders with world-leading pastry chefs and immerse herself in new ideas. ...Melbourne, stand by!
