George Calombaris To Launch Hellenic Hotel

Williamstown’s much-anticipated Hellenic Hotel will open in June, 2016. The team behind Hellenic Republic is working with March Studios to put final touches on the former Hobsons Bay Hotel, one of the west’s most iconic pub buildings.

The World Loves Melbourne is a big fan of Hellenic Republic and we have dined there several times; imbibing its casual atmosphere and celebration of Greek culture, as well as smart food that gives the punter value for money. George nails the concept of what diners really want while being true to himself.

George Calombaris and co-owner Travis McAuley have big plans for the menu at Hellenic Hotel, hiring Josh Pelham as the venue’s head chef. Pelham worked with Calombaris at Fenix and The Press Club before heading overseas, rising to head chef at London’s acclaimed The Square before returning to Melbourne to work at Scott Pickett’s Estelle. “We’re rapt to have Josh on the Hellenic team,” Calombaris says. “Josh is an exceptional chef. There’s a reason why he was awarded Young Chef of the Year (The Age Good Food Guide 2015). To have him on board is an exciting addition to the team. “This project has been such a long time coming, but it will be well worth the wait.

The pub has had a remarkable history and it’s a real privilege to give the old building a new life – the Hellenic way.” March Studio’s design reflects Hellenic hospitality with a seaside atmosphere. “The design is inspired by its local history and Greek culture; Greek culture is intimately connected to the sea; a connection that will be celebrated in the colours and textures of the restaurant,” explains, lead architect Rodney Eggleston.

Hellenic Hotel will be a seven-day dining and drinking destination, offering modern Greek dining with unique Hellenic wines. “I call it Gastro Greek, which means a Hellenic touch on great Aussie pub food,” George says. “What we are is simple. The ground floor is the tavern - it’s all about ‘Gastro Greek’ food. Level one is the Public Bar, offering great beer on tap, daily pub specials and a cheeky big screen to watch your favourite team. The veranda is perfect for people watching and a cheeky Negroni. Why not! And don’t forget, Hellenic Hotel takeaway for all your food and beverage needs, on the go.”

Opening seven days a week from noon until late. You can dine in or take away.

Hellenic Hotel is another exciting project by Hellenic. The official opening date will be announced in May 2016.
