Chef Rohan Desai has a new pop up, ‘Flavours of India’,  at stylish Evergreen, Crown Melbourne from 6 – 23 July, and we were invited along on the opening night of this stunning experience. With courses reflecting and respecting regional cuisines of India, we enjoyed a delightful culinary journey through India, savouring every bite of this innovative and high quality menu.

From Thursday, 6 July – Sunday 23 July 2023, Flavours of India takes you on a culinary journey, with Crown’s very own Chef, Rohan Desai bringing an exceptional offering to lovers of Indian cuisine.

An expat from The City of Lights (otherwise known as Mumbai), Rohan grew up in a household that was half-Maharashtrian and half-Gujarati, it was here that his passion for Indian fusion was born; to him, food is all about happiness and joy.

Combining inspiration from two prominent regions in India, guests will be able to experience the ‘Flavours of India’ that are close to Rohan’s heart and heritage.

Flavours of India takes you on a culinary journey, with Crown’s very own Chef, Rohan Desai behind the wheel (honour to meet him).
This was a sensational sensory experience (David and Gary) with dishes ranging from Murgh Kheema Salli; a taste and texture triumph chicken dish with ground homemade spices, through to delectable Barramundi Pollichathu, 24-hour marinated Pahadi Lamb Chops with depth of flavour, and a slow cooked flavour hit that is Murgh Parda Biryani.
These dishes were perfectly complimented by a range of compelling Indian condiments, pappadams and an eye-catching dessert aptly named, Childhood memories in a bowl. Our meal also featured expertly paired local wines.
