Provolone Valpadano DPO Party at Al Dente Enoteca

What an extraordinary night at Al Dente Enoteca, celebrating the brilliance of Provolone Valpadano DPO with curated courses by the exceptional (rock star chef) Andrea Vignali. From start to finish, this evening was all about the joyful, melting embrace of premium provolone woven through every dish.

The night kicked off with a tantalizing array of assaggini — each a love letter to delicious iconic provolone. The calzone stuffed with Provolone Valpadana PDO piccante was pure comfort, while the tartelletta brought quince and both dolce and piccante provolone together for a perfectly balanced bite. But the Abrolhos scallop with pear and Provolone Valpadana PDO dolce stole the show with a flavour and texture punch.

Then came the agnolotti, filled with creamy Provolone Valpadana PDO dolce, paired with earthy morels and fresh chives. This was pasta at its finest, the provolone filling being a masterstroke.

For the main event, guancia di manzo — rich, tender beef cheek — was paired with Jerusalem artichoke two ways and a generous helping of Provolone Valpadana PDO piccante. It was indulgence personified.

Finally, the blood orange cheesecake brought a delightful twist, incorporating Provolone Valpadana PDO dolce butterscotch for a finale that felt like a revelation.
