Chef Daniel Wilson Pairs With Grub Food Van

Daniel Wilson, the chef (one of our favourites) and author behind the restaurant Huxtable and co-founder of the Huxtaburger franchise, is collaborating on the summer menu at Fitzroy’s Grub Food Van. Grub is reopening the van and extending their trading hours, so there’ll be cocktails, wines and Daniel Wilson’s menu served in Fitzroy’s favourite front yard.

Daniel is thrilled to be back in his old stomping ground of Fitzroy, where he co-owned Huxtable from 2010 until February 2016. “I love the bright nature of the space at Grub, and there’s a great synergy with the venue and the varied cuisines I like to cook.” Before Daniel and his business partners, Jeff Wong and Dante Ruaine opened Huxtable - he managed the kitchens of Arintji in Federation Square and Blake’s Cafeteria on Greville Street, Prahran.

With the closure of Huxtable, Daniel, Jeff and Dante immersed themselves in the growth of the Huxtaburger franchise. At Grub, Daniel’s menu reflects his love of quality seasonal ingredients, treated simply.

The new menu highlights, with equal weighting, a combined love of land, sea and earth with big flavours, clean salads, bar snacks and hearty share plate meals. It includes karaage chicken ribs, yuzu and togarashi mayo; sashimi tuna, shiso, wasabi, brown rice with snowpeas; falafel with baba ghannouj, harissa yoghurt, pickles and lettuce cups and sautéed Chicken livers, hazelnuts, port-poached pear, frisée and Queso Valdeon salad.

The menu also reflects Grub’s commitment to seasonal, local produce and an ever-evolving menu supported by a savvy cocktail and wine list. While you won’t see him chopping onions, rattling the pans or leading the pass, Daniel is working closely with the Grub team throughout the summer to produce an intelligent, vibrant menu and overseeing the season at Grub Food Van.
