Burn City Smokers Return to Grand Hyatt Melbourne

Grand Hyatt Melbourne has been bringing back the burn with the city’s favourite barbecue legends, Burn City Smokers, taking over the hotel’s award-winning Collins Kitchen restaurant. The World Loves Melbourne was invited along to check out the new menu, a great offering for city workers and BBQ lovers. The burn returns!

After extending their three-month residency to six months last year due to an overwhelming demand, Steve Kimonides and Raphael Guthrie have towed in their custom-built smoker for round two to show off their smokin’ hot new additions to their Southern American-inspired menu.

Return of the burn baby!

Working closely with Grand Hyatt Melbourne’s Executive Chef Jason Camillo, new dishes include woodfried pippies, a Burn City Smokers “Chiko” roll, and an indulgent meat platter for two with pork ribs, brisket and smoked chicken.

Steak tartare with potato lattice chips. We love a steak tartare and this was a cracker. We busted open the yolk on top then spooned the mixture on to the chips. Which ever way you enjoy it its a fab dish!

For vegetarians, the expanded menu also includes jalapeno poppers, fried camembert and an impressive smoked mushroom burger. Last year’s fans need not to worry as the famous Burn City Smoker brisket burger is also back along with the boys’ unrivalled homemade sauces.

Who remembers the chiko roll? Burn City Smokers "chiko" roll with smoked pork, cabbage, peas. Fun and playful dish but also absolutely delicious with smoked pork quality meat and rustic charm of cabbage and peas.

As one of the most exciting artists emerging from the competitive Melbourne street art scene, diners can enjoy spotting Justine’s signature collage-style designs and bold colours throughout the restaurant and outside the hotel. This unique piece is on silent auction for the duration of the pop-up and Grand Hyatt Melbourne welcomes all to walk in and place a bid.

Burning for a Cause! All proceeds from the silent auction will go directly to Wheelly Good Coffee – a local social enterprise run by Whitelion, a not-for-profit that supports young people at risk. By providing employment through barista training, the program provides young people in need a chance to help break the disengaging cycle and make positive changes towards a new life.

At Grand Hyatt Melbourne, they are proud to support a program that helps foster new talent in the industry…and who knows, may uncover the next superstar barista in town.
