Rob Dolan Wines - The Pairing Method Influencer Night 2023 is one of the most anticipated events on the calendar. We were thrilled to be invited along again after attending a previous epic event.

The event was conceptualised for Good Food Month in 2021, and following it’s success, Rob Dolan Wines took it to the next level in our pursuit to find the perfect pairing. This is achieved through reverse-engineering a meal to pair perfectly with a specific wine – down to each element.

After a wine tasting led by Meg Brodtmann, Australia’s first female Master of wine (is there anything she doesn't know about wine), we were guided through tasting different ingredients which change the flavours, structure, or texture of the Rob Dolan White Label Pinot Noir. We then chose our favourite elements as a group and “mystery box” 2-hatted chef Tyson Bertoncello (O.MY) who created our entree in a live demonstration. Who would have thought licorice would be a perfect pairing with Pinot Noir?

After enjoying this custom-made pasta creation as our entrée, The Farm Executive Chef Anthony Cutajar stepped in and serve an incredible Beef Cheek meal designed for the Rob Dolan White Label Cabernet, which has been engineered as the perfect pairing, using The Pairing Method.
To finish, a dessert matched with the Rob Dolan Two Barrel Batch Muscat.
