Inspired by Shannon’s Latin roots, the evening included an assortment of vibrant delicious dishes, including Fried Olives, Roasted Padron and Manchego Croquettes, Peri Peri Pollo, Barbacoa Tostadas,Tortilla Espanola, Tacu Tacu, Watermelon Salad, and Pastor Mushrooms prepared on the Josper Grill. As well as delicious desserts such as Azteca Tart.
