Truffle Thursdays at Bonny Fitzroy
Chef James Cornwall and Bonny Bar Fitzroy have launched Truffle Thursdays this June. With the wish to make the elusive fungi more accessible to diners, Cornwall and the team have partnered with high-end suppliers, Friend and Burrell, to deliver winter’s cherished ingredient in a delicious format at $45pp. We were invited along for the experience and found it to be a great way to celebrate truffle season and be indulged. James showed us what you can do with truffles, bringing the finesse and flair.
Brown butter and seaweed madeleines, cultured cream (with shaved truffle). A taste and texture triumph.
Heirloom Beetroot Salad with Truffle.
Spud Sisters Sobago Potato with Cheese Fondue, chive and truffle. This potato dish was more a feature in itself than a complement to a main. Outstanding.
Every Thursday, during truffle season (typically June - August), Cornwall’s menu will feature fresh local truffles over three courses. The truffles’ provenance will shift across the country depending on each region’s readiness and quality; sourced from Western Australia and Tasmania. We enjoyed Tasmanian truffles during our visit. It was a bonus that James shaved truffles into our dishes at our table.
Western Plains Pork Tomahawk was magnificent, with loads of radicchio, roast pumpkin puree, vincotta, and of course truffle!
The Western Plains Pork Tomahawk without truffle (just to show what is essentially underneath).
A weekly snacks and small plate menu will accompany Truffle Thursdays as well as the Monaka & white chocolate ice cream sandwich with macadamia miso caramel for dessert.
A highlight being a special truffle vodka (from 3 Foxes) service available for guests to indulge throughout the evening. As always, the Bonny bar will be fully stocked with a curated selection of local wines and craft beers, as well as an offering of seasonal cocktails.
Of the menu and produce, Cornwall says, “Truffle season is always an exciting time of year, we want to showcase them in a variety of different ways from snacks right through to dessert, along with a table-side vodka service. We want the nights to be fun, interactive and accessible.”
Several of the usual outstanding Bonny dishes are also available.
Ice Cream Sandwich is a sensation and shows how versatile truffles really are.
Also looking forward to truffle season is Melanie Young from Friend and Burrell; “Melbourne chefs have a lovely and growing confidence in cooking with black truffles. They know that not every dish needs to scream truffle but that even the most subtle use can add a beautiful umami depth and complexity to their dish.”
Truffle Thursdays will be available from June 8
