Pascale Bar & Grill at QT Melbourne Hits the Mark
Pascale Bar & Grill at new hotel QT is a fabulous addition to the Melbourne scene, and The World Loves Melbourne (David and Mario) was invited along to check it out.
Designed to pay homage to the ‘Paris-end’ of Collins Street, with its bold industrial chic and emphasis on high-fashion, Pascale presents an all-day affair, indulging its guests with an expansive, French-infused, Euro bistro inspired menu. Relax in a stylish unique environment in Melbourne.
The menu is designed by QT Melbourne’s Executive Chef Paul Easson (QT Sydney’s Gowings Bar & Grill, Rockpool Bar & Grill Melbourne) in collaboration with QT Hotels Creative Food Director, Robert Marchetti, to satisfy and intrigue the developed palates of discerning foodies.
Thoughtfully designed, the open bustling kitchen offers a glimpse into the creation of the dishes. We decided to order 3 mains as a way of sampling a range of the menu. The Pan Fried Snapper Fillet was perfectly cooked, soft and flavoursome, with the joy of spooning Classic lemon caper butter sauce over the fish. Crispy skin and tender white flesh. The advent of Witlof was an excelelnt accompaniment.
We went into rustic overdrive with Spit Roasted Chicken and a Paris Mash. Once again, pouring the sauce over the chicken and mash was enjoyable. This chicken was compelling, perfectly roasted with crispy skin. Rewarding well executed food.
Then it was time for steak; something that Pascale executes with aplomb. Rib Eye Beef with Bernaise and Twice Cooked Chips is a triumph. A squeeze of lemon over the steak and that thick Bernaise sauce hits the mark. High quality rib eye is hard to beat.
The wood-fired ovens and tempting glass encased display playing host to the Madame of all patisseries. Produce grown in QT Melbourne’s rooftop garden features on the menu alongside locally sourced ingredients selected by the QT Forager, Georgie Neale, ensuring quality and freshness for Executive Chef Paul Easson and his team’s artisan flair.
Word has spread at Pascale commands a packed house from inception, with its chic modern decor and European feel.
Dessert was also compelling with the famous "Stove" a fascinating study in chocolate.
Pascale’s Bar is the hotel’s social hub, with a cocktail menu inspired by the lively New Orleans ‘French Quarter’, an extensive wine selection and a home-made collection of syrups, fusions and shrubs. Signature Classic cocktails will include a barrel-aged Vieux Carre, Espresso Martini with Cognac and ‘Spiced Pear’.
We thoroughly enjoyed our time at Pascale and are keen to return.
